Steak with Green Peppercorn Sauce

Ingredients:

1 1/2 to 2 pounds tender boneless beef steak, cut 1 to 1 1/2-inches thick
1 tablespoon butter or margarine
1 tablespoon olive or vegetable oil
6 tablespoons brandy, warmed
1/4 to 1/2 cup minced shallots
1 to 2 tablespoons canned green peppercorns, rinsed and drained; or 1 to 2 tablespoons dried green peppercorns
3/4 cup whipping cream or creme fraiche
1 tablespoon Dijon mustard
1 tablespoon dry tarragon
Salt and ground black pepper

Methods:

1. Trim fat from steak or score fat to prevent meat from curling as it cooks
2. Melt butter in oil in a wide frying pan over medium-high heat. add meat and cook, turning once, until well browned on both sides and done to your liking; cut to test (6 to 8 minutes for rare).
3. Move pan into an open area, away from exhaust fans and flammable items. Add brandy and ignite; shake or tilt pan until flame dies. Transfer meat to a serving dish and keep warm.
4. Add shallots to pan cook over high heat, stirring, until shallots are soft, about 2 to 3 minutes. Add peppercorns, cream, mustard and tarragon. Bring to a boil; boil, stirring, until large, shiny bubbles form and sauce is slightly thickened, about 3 to 4 minutes. Stir in any accumulated meat juices from serving dish. Season with salt and pepper; pour over meat.

Steak Marengo

Ingredients:

2 teaspoons olive oil
1 pound round steak
1 onion, sliced
1 garlic clove, minced
1 cup sliced mushroom

Methods:

1. Add olive oil to a large skillet, sear round steak on both sides quickly over high heat. Remove to a cutting board.
2. In the skillet, cook thinly sliced onion, finely chopped garlic clove, and sliced mushrooms. Cook until the onions are tender. Meanwhile, slice the steak into very thin strips and return to the skillet. Heat through.

Steak and Vegetable Skillet

Ingredients:

2 tablespoons vegetable oil
1 pound sirloin steak, sliced
1/2 cup carrot, sliced
1 package dry onion soup mix
1 cup water
2 tablespoons soy sauce
2 tablespoons tomato ketchup
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
8 ounces bamboo shoots
6 ounces sugar peas

Methods:

1. In a large skillet, heat oil and brown thinly sliced sirloin steak over medium-high heat.
2. Remove the beef, then add sliced carrots, dry onion soup mix blended with water, soy sauce, ketchup, garlic powder, and ginger. Bring to a boil, then simmer, stirring occasionally, for 5 minutes, or until the carrots are tender-crisp.
3. Return the beef with bamboo shoots (drained), and sugar peas; simmer for 3 minutes or until heated through.

Spicy Flank Steak

Ingredients:

2 1/2 pounds beef flank steak
1 package dry onion soup mix
1 teaspoon chili powder
1/4 cup vegetable oil
2 tablespoons packed brown sugar

Methods:

1. Lightly score flank steak.
2. In a small bowl, blend together dry onion soup mix, chili powder, oil, and brown sugar. Brush half over the steak and broil, turning once, brushing the remaining spice mixture on the other side.

Special Flank Steak

Ingredients:

Vegetable cooking spray
1 1/4 pounds flank steak
1 onion, sliced
2 tomatoes, seeded and chopped
1/2 cup water
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon ground pepper

Methods:

1. Spray a large skillet with vegetable cooking spray, and over high heat, quickly sear flank steak. Remove to a cutting board.
2. In the skillet combine thinly sliced onion, chopped tomatoes, water, and chili powder. Simmer uncovered for 5 minutes.
3. Slice the steak and return to the skillet and cook until done, about 5 minutes. Season with garlic salt, and pepper.
