Fandango Sirloin Steak

Ingredients:

1 1/2 cups chopped onions
1 cup diced jicama
1 1/2 cups chopped tomatoes
1 tablespoon chopped fresh cilantro
1 jalapeƱo, seeded and chopped
1 garlic clove, crushed
1 teaspoon fresh lime juice
1 teaspoon fresh lemon juice
1/8 teaspoon liquid hot pepper sauce
1/8 teaspoon salt
1 tablespoon garlic powder
1 1/2 teaspoons granulated sugar
1 teaspoon white pepper
1 tablespoon chili powder
1/2 tablespoon coriander
1/4 teaspoon cayenne pepper
1 1/2 pounds sirloin steak
1 teaspoon olive oil

Methods:

1. In a large salsa dish combine chopped onion, diced jicama, chopped tomatoes, chopped cilantro, chopped jalapeno, crushed garlic clove, lime juice, lemon juice, liquid hot pepper sauce, and salt. Mix well, and refrigerate.
2. Brush both sides of sirloin steak with olive oil, then dredge in mixture of garlic powder, sugar, white pepper, chili powder, coriander, and cayenne pepper. Grill over high heat for 7 to 10 minutes, turning once. Serve with the jicama salsa.

Deviled Swiss Steak

Ingredients:

3 pounds round steak
2 teaspoons dry mustard
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
1 (4-ounce) can mushrooms
1 tablespoon Worcestershire sauce

Methods:

1. Cut round steak into serving size pieces. In a small bowl combine dry mustard, salt, and pepper; sprinkle over the round steak and pound on both sides with a meat mallet.
2. In a large skillet brown the steak in oil. Pour off the drippings.
3. Drain canned mushrooms reserve the the liquid and enough water to make 1/2 cup. Stir in Worcestershire sauce and add to the round steak.
4. Cover the skillet tightly and cook slowly for 1 1/2 hours. Add the reserved mushrooms during the last 5 minutes of cooking. Place the round steak on a warm serving platter and top with the mushrooms.

Crispy Beef Bites

Ingredients:

2 pounds cooked beef sirloin roast
6 tablespoons milk
1 tablespoon all-purpose flour
3 large eggs, beaten
1 1/2 cups all-purpose flour
4 teaspoons salt
1/4 teaspoon ground black pepper
3 cups vegetable oil

Methods:

1. Cut beef roast into 1-inch pieces.
2. In a small bowl, combine milk and 1 tablespoon flour. Stir into beaten eggs.
3. In a shallow dish or plate, mix together 1 1/2 cups flour, salt and pepper. Dip beef pieces into egg mixture and then dredge in flour mixture.
4. Fry in hot shortening until browned and heated thoroughly, about 10 minutes. Drain on paper towel.

Country Fried Steaks with Spicy Blue Cheese Sauce

Ingredients:

4 beef round (sirloin) tip side steaks, cut 3/4-inch thick (about 7-ounces)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 large egg, beaten
1 tablespoon water
1/2 cup unseasoned dry bread crumbs
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
2 tablespoons vegetable oil

Sauce:
1/2 cup refrigerated prepared blue cheese dressing
1/4 cup dairy sour cream
1 teaspoon green hot pepper sauce

Methods:

1. Combine flour, 1/2 teaspoon salt and pepper is shallow dish. Whisk egg and water together in shallow bowl until blended. Combine bread crumbs, 1/4 teaspoon salt, garlic powder and red pepper in separate shallow dish.
2. Cut steaks into a total of 4 serving-size pieces. Place between sheets of waxed paper; pound to 1/4-inch thickness. Dip each steak in flour mixture to coat both sides lightly; shake off excess. Dip in egg mixture, then in bread crumb mixture to coat.
3. Heat 1 tablespoon oil in large nonstick skillet over medium heat until hot. Place 2 steaks in skillet; cook 5 minutes or until coating is crisp and golden and beef is medium rare, turning once. (Do not overcook.) Remove steaks; keep warm. Repeat with remaining oil, if needed, and steaks.
4. Meanwhile combine sauce ingredients in small bowl. Serve with steaks.

Caribbean-Style Steak

Ingredients:

1/4 cup steak sauce
2 tablespoons firmly packed brown sugar
2 tablespoons fresh lime juice
1 1/4 pounds steaks
1/2 teaspoon salt

Methods:

1. Combine steak sauce, brown sugar and lime juice in a small bowl reserve 1 tablespoon for basting. Place steak in a glass dish and add marinade, turning to coat. Cover tightly and refrigerate overnight, turning occasionally.
2. Preheat grill to medium heat.
3. Remove steaks from marinade and place on grill. Cook for 14 to 20 minutes, or until cooked to your preference, turning once. Brush with reserved basting sauce during the last 2 minutes of cooking.
4. Season steak with salt. Carve into thin slices to serve.
