Creamy Chipped Beef Tetrazzini

Ingredients:

1 (11-ounce) package Stouffer’s Creamed Chipped Beef, prepared according to package directions, kept hot
6 ounces vermicelli or spaghetti noodles, cooked according to package directions
2 tablespoons butter or margarine
1/2 cup diced onion
1/2 cup diced celery
2 tablespoons milk
1/2 cup shredded Swiss cheese

Methods:

1. Cook butter, onion and celery in medium skillet until tender. Add creamed chipped beef, milk, cheese and pasta.
2. Cook over low heat for 3 to 5 minutes or until cheese is melted and mixture is hot. Season with ground black pepper.

Creamy Broccoli and Beef

Ingredients:

1 (16-ounce) package noodles
1 tablespoon vegetable oil
3/4 pound steak, sliced
1 garlic clove, minced
1 onion, sliced
1 (10.75-ounce) can cream of broccoli soup
1/4 cup water
1 tablespoon soy sauce
2 cups broccoli, sliced

Methods:

1. Prepare noodles according to package directions.
2. In a skillet, heat oil and cook sliced steak and finely chopped garlic clove until brown. Add sliced onion and cook another 5 minutes.
3. Stir in cream of broccoli soup, water, and soy sauce. Heat to boiling, then add sliced broccoli. Cook until tender; about 5 minutes.
4. Serve over the prepared noodles.

Corned Beef Casserole

Ingredients:

12 ounces corned beef
4 potatoes, sliced
1 (10.75-ounce) can cream of mushroom soup
2 cups milk

Methods:

1. Slice corned beef 1/4-inch thick or crumble. Thinly slice potatoes. Alternate layers in a greased baking dish.
2. Mix together cream of mushroom soup and milk. Pour over the layers and bake at 350°F (175°C) oven for 1 hour, or until the potatoes are tender.

Classic Red Flannel Hash

Ingredients:

1/4 pound salt pork
1 onion, chopped
3 cups chopped potatoes
2 cups corned beef
1 cup canned beets, chopped
1/4 cup whipping or heavy cream
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Methods:

1. Fry salt pork in a large skillet until crisp; remove and set aside in a medium-sized bowl. Drain skillet and add chopped onion; cook until tender. Add to the salt pork along with chopped potatoes, corned beef, chopped canned beets, cream, salt, and pepper; mix well.
2. Press mixture evenly into the skillet. Cook, uncovered, over medium heat until browned and crusty on the bottom, about 35 to 40 minutes.

Cherry Blues Steak Pizza

Ingredients:

1 (12-inch) pre-baked pizza crust
1/2 cup dried tart cherries
Butter
1 1/2 cups onion, sliced thin
2 1/2 cups baby portobello mushrooms, sliced thin
1 tablespoon olive oil
1 1/2 cups beef (any tender cut), cooked medium-rare and sliced thin
1 1/2 cups blue cheese, crumbled

Methods:

1. Sauté onions in butter until caramelized; let cool.
2. Sauté portobello mushrooms in butter until tender; let cool.
3. Brush olive oil evenly over pre-baked pizza crust. Spread onions and mushrooms over pizza crust.
4. Arrange slices of beef and cherries over onions and mushrooms. Sprinkle blue cheese over all.
5. Bake at 450°F in a standard oven 7 to 9 minutes, or until cheese has melted.
6. Serve as an appetizer or main course.
