Mustard Glazed Brisket

Ingredients:

1 (3 to 4 pound) boneless beef brisket
2 cloves garlic, peeled
1 large onion, sliced
2 stalks celery
8 black peppercorns
4 whole allspice
1 bay leaf
3/4 cup packed brown sugar
3 tablespoons prepared mustard

Methods:

1. Place brisket, garlic, onion, celery, peppercorns, allspice and bay leaf in a large soup pot. Cover with water.
2. Simmer covered 3 to 3 1/2 hours until tender, adding water as necessary.
3. Remove brisket and place in a roasting pan with 1/2 cup of the cooking liquid.
4. Combine brown sugar and prepared mustard. Salt and pepper brisket and spread with the mustard glaze.
5. Bake for 15 to 20 minutes at 350°F until glaze bubbles and is browned.

Marinated Brisket

Ingredients:

4 pounds brisket
1/4 cup cider vinegar
1/4 cup red wine
3 tablespoons chili sauce
1/4 cup Worcestershire sauce
1 tablespoon salt
1 1/2 teaspoons ground pepper
1/2 teaspoon garlic salt

Methods:

1. Marinate a brisket in a mixture of cider vinegar, red wine, chili sauce, Worcestershire sauce, salt, pepper, and garlic salt overnight. Turn occasionally.
2. Place in a shallow baking dish and pour the marinade over the top.
3. Bake, covered, at 275*F for 8 hours, or until tender. Slice thinly.

Indonesian Brisket of Beef

Ingredients:

3 pounds beef brisket
3 garlic cloves, finely chopped
1/2 pound bacon, diced
3 onions, sliced
3 (16-ounce) cans pinto beans, drained and rinsed
3 carrots, sliced
2 jalapenos, seeded and chopped (see note)
3 tomatoes, seeded and chopped
2 cups celery, sliced
2 cups frozen corn kernels
1 teaspoon seasoned salt

Methods:

1. Cover brisket with water and boil in a large saucepan for 3 hours.
2. Meanwhile, after 2 1/2 hours, combine chopped garlic cloves, diced bacon, sliced onions, and pinto beans in a 2 to 3-quart casserole dish.
3. Bake at 350*F (175*C) degrees for 30 minutes.
4. Add the boiled brisket to the bean mixture with sliced carrots, chopped jalapenos, chopped tomatoes, sliced celery, corn, and seasoned salt. Continue baking for another 30 minutes.

Couldn’t Be Easier Brisket

Ingredients:

1 (3 to 4 pound) boneless beef brisket
1 bottle chili sauce
1 can Coke (not diet or sugar-free)
1 packet dry onion soup mix

Methods:

1. Preheat oven to 300°F.
2. Combine chili sauce, Coke and soup mix.
3. Place brisket in a foil-lined baking pan. Pour sauce mixture over brisket and cover with another sheet of foil sealing edges.
4. Bake at 300°F for 3 to 3 1/2 hours until tender.
5. Carve brisket against the grain and serve the pan juices as a sauce.

Brisket

Ingredients:

1 (3 to 4 pound) brisket
1 tablespoon vegetable oil (or enough to coat your pot)
Pinch of black ground pepper
2 cups water
1 teaspoon minced onion
1 teaspoon garlic powder
1 teaspoon dried rosemary
1 teaspoon parsley flakes
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon thyme flakes

Methods:

1. If possible use non-stick pot. Coat your meat with the ground pepper (I do not use salt, but you can if you like, not too much).
2. Place the brisket in the pot when the oil is medium hot and slowly brown all sides.
3. After about a 1/2 hour add all the above spices to the pot, (try to coat the meat with the spices, as well) then add the two cups water (or enough to cover the meat), cover the pot and cook over low heat for about 3 to 4 hours or until the meat is fork tender. You’ll see the results are wonderful.
